Fresh Raw Ripe Olives, 20 lb Box
THIS ITEM IS A PREORDER. Early Ripe shipments are expected to begin the week of October 19; Late Ripe will follow as the crop matures.
Fresh, uncured, oil-rich olives harvested in Corning later in the season and selected for soundness, maturity, and suitability for ripe curing or small-batch pressing.
2026 Ripe Olive Harvest Update, October 9
Our ripe olive harvest follows the green olive season. For the 2026 late-season harvest, we are evaluating the optimal fruit from several oil-rich olive varieties grown in Corning.
Each box will contain a single olive variety. We will not mix varieties within a box. The variety may change as the late-season harvest progresses, and we will identify the current variety as soon as the harvest source is confirmed.
Late-season harvesting is increasingly dependent on weather. Rain and cold can interrupt picking while the fruit continues to mature on the tree, so exact availability may change as the season progresses.
Early Ripe — 25–50% Purple shipments are expected to begin the week of October 19. Late Ripe — 50–100% Purple will follow as the crop continues to mature.
FOR 2026, RIPE OLIVES WILL BE OFFERED IN TWO HARVEST MATURITY OPTIONS: EARLY RIPE — 25–50% PURPLE, WITH SHIPPING EXPECTED TO BEGIN THE WEEK OF OCTOBER 19, AND LATE RIPE — 50–100% PURPLE, WHICH WILL FOLLOW AS THE CROP MATURES. EACH BOX WILL CONTAIN ONE CORNING-GROWN OLIVE VARIETY.
Variety and Harvest Maturity
Our ripe olive offer is selected for soundness, maturity, and suitability for ripe curing or small-batch pressing. All varieties selected for this program will be oil-rich.
Choose your preferred stage under Harvest Maturity:
- Early Ripe — 25–50% Purple
- Late Ripe — 50–100% Purple
These ranges describe the overall color development of the fruit at harvest. Natural variation from olive to olive is expected within each box; the fruit will not be visually uniform.
Early Ripe fruit has begun developing substantial purple color while retaining more of the firmness and color variation associated with an earlier stage of maturity.
Late Ripe fruit is further advanced in color, ranging from predominantly purple to nearly black depending on the variety and harvest date. The fruit will generally be more tender than the Early Ripe selection.
Early Ripe orders will be filled first, beginning the week of October 19. Late Ripe orders will follow as the fruit advances naturally on the tree.
Fruit size and shape will also vary by variety. This offer is selected for mature, oil-rich fruit rather than for uniform table-olive size or appearance.
Fresh Ripe Olives for Home Curing
These freshly harvested olives are sold raw, uncured, and untreated. They must be cured before eating.
Our ripe olive selection is intended for curing methods suited to mature fruit, including dry-salt curing and other traditional ripe-olive preparations.
Because variety and maturity may change during the late-season harvest, please review the current harvest update before ordering.
The 20 lb box is a practical choice for larger household batches, classrooms, community programs, or small-batch pressing projects. Customers who prefer a smaller quantity may choose our 10 lb box of fresh raw ripe olives.

Ripe Olives for Small-Batch Oil Pressing
Some customers purchase ripe olives for educational programs or hobby-scale oil pressing.
Customers using a cider press followed by gravity separation have reported producing approximately 16 fluid ounces of oil from a 20 lb box.
This is an anecdotal planning estimate rather than a guaranteed yield. Actual results vary substantially according to olive variety, maturity, oil content, equipment, pressing technique, and extraction efficiency.
Ripe Olives for Chanukah Oil-Making Programs
We learned a great deal from our school, community center, and temple customers during the 2025 harvest and are expanding this program for 2026.
For Chanukah oil-making programs, customers may choose one of two scheduled shipping dates:
- Monday, November 16
- Monday, November 23
Please consult our UPS transit information when selecting your shipping date. Contact Liz Tagami at 530-727-2004 before ordering if the anticipated transit schedule may not work for your location or program.
