Fresh Raw Manzanillo Olives, 10 lb Box
Fresh, uncured Manzanillo olives from our Corning harvest for home curing. New 2026 orders are closed while our final golden green harvest is reserved for customers with existing orders.
2026 Manzanillo Harvest Update, October 11
We have secured another Corning-grown block of sound, golden green Manzanillo and expect to have sufficient fruit to complete our remaining Manzanillo backorders.
We stopped shipping Manzanillo during the third week of September because the fruit then available could no longer consistently meet our standards through packing and transit. We continued searching rather than ship fruit we could not stand behind.
On Friday evening we visited another Corning orchard and found the Manzanillo we had been looking for: sound fruit that remains golden green with very little blush. A visit to the orchard changed our outlook for the remainder of the season. You can read the fuller story in our Mid-Season Olive Crop Report | October 2026.
Harvesting and packing resume the week of October 12. We will begin with orders for which UPS labels have already been generated, then continue through the remaining backlog. Transit time will also influence the daily shipping sequence, particularly for customers with the longest UPS Ground journeys.
Customers with existing Manzanillo orders do not need to place another order or contact us to confirm their place in the queue.
WE HAVE SECURED SUFFICIENT GOLDEN GREEN MANZANILLO TO COMPLETE OUR REMAINING BACKORDERS. PACKING RESUMES THE WEEK OF OCTOBER 12. NEW 2026 MANZANILLO ORDERS ARE CLOSED.
Fresh Raw Olives for Home Curing
Freshly harvested Manzanillo olives are sold raw, uncured, and untreated. They must be cured before eating.
Manzanillo is a versatile table olive well suited to lye curing, brining, and other traditional home-curing methods.
Curing Guidance
For tested home-curing guidance, see our Reader’s Guide to UC ANR’s Olives: Safe Methods for Home Pickling.
Manzanillo Size and Yield
Manzanillo is naturally smaller than Sevillano, and each harvest produces a natural assortment of sizes. Exact proportions vary with the orchard and stage of maturity.
In our packing test, approximately 19.3 ounces of fresh Manzanillo olives filled a one-quart wide-mouth canning jar. As a planning estimate, a 10 lb box fills approximately 8 to 9 quart jars, depending on fruit size and how tightly each jar is packed.
About Manzanillo Olives
Manzanillo originated in Spain and is one of the varieties most closely associated with California table olives.
It is a dual-purpose olive used both for table-olive curing and for olive oil. Compared with Sevillano, Manzanillo has smaller fruit, a more favorable proportion of flesh to pit, and a higher oil content.
The fruit becomes increasingly tender as it matures, making maturity at harvest an important consideration for home curing. Our final 2026 green harvest is golden green with very little exterior blush, although oil development has begun within the flesh.
Final 2026 Manzanillo Availability
Our final golden green Manzanillo harvest is reserved for customers with existing orders. We are not accepting additional 2026 green Manzanillo orders.
