Fresh, uncured Sevillano olives measuring 18–23 mm, selected from our Corning harvest for home curing. Our Jumbo Mix spans the familiar commercial size names Large, Mammoth, Giant, and Jumbo, with Sevillano’s characteristic dense flesh and substantial curing texture.
2026 Sevillano Harvest Update, October 3
The crop has now reached its golden green stage. Jumbo Mix remains available for our final Sevillano harvest of 2026. The 100% Green—Firmest stage and our 24 mm+ Colossal selection are closed for the season.
All unfulfilled Sevillano orders are still on the trees. Triple-digit temperatures are forecast beginning the week of October 5, so we are suspending harvest and packing until the week of October 12, when temperatures are expected to return to about 78°F.
That will be our final Sevillano harvest week of 2026. Orders remain subject to weather, fruit condition, and the quantity we can pack to our standards.

What Is Our Jumbo Mix Sevillano?
Our Jumbo Mix contains sound, whole Sevillano olives measuring 18–23 mm. Within that range, the fruit spans the familiar commercial size names Large, Mammoth, Giant, and Jumbo.
Commercial size terminology varies, so we use the measured range to describe exactly what we pack. Each box contains a natural assortment within that range, and exact proportions vary with the orchard and daily sort. Specific sizes cannot be requested.
Jumbo Mix is the same Sevillano variety as our larger Colossal fruit, with exceptionally dense flesh, very low oil content, and the firm texture that makes Sevillano so well suited to curing.
Fruit 17 mm and smaller is not packed for shipment.
Customers who prefer a smaller quantity may choose our 10 lb Jumbo Mix Sevillano box.
Fresh Raw Olives for Home Curing
These freshly harvested Sevillano olives are sold raw, uncured, and untreated. They must be cured before eating.
Sevillano’s dense flesh makes it well suited to lye curing, brining, and cracked or smashed olive preparations.

Sevillano Size and Yield
This Jumbo Mix contains Sevillano olives measuring 18–23 mm, selected during daily sizing and grading.
As a planning estimate, one pound of fresh Sevillano olives generally fills approximately one quart jar, depending on fruit size and how tightly the jar is packed. A 20 lb box will therefore fill roughly twenty quart jars.
About Sevillano Olives
Sevillano originated in Seville, Spain, where the variety is known as Gordal, meaning “the fat one.” In the United States, its large fruit has long been described using terms such as Queen, Jumbo, and Colossal, although commercial terminology varies.
Sevillano has a relatively large pit and a modest flesh-to-pit ratio. Its dense flesh and very low oil content help it retain a substantial texture through curing.
Sevillano is grown for curing and is not a practical choice for making olive oil at home.

Jumbo Mix is the Sevillano size available for our final 2026 harvest. The fruit is now golden green.

How Fresh Olives Ship
Olives are picked from Corning orchards, then sized, graded, and hand-packed at our Fresh Olive Rally Point in Corning for our afternoon UPS pickup.
Harvest and packing are suspended during the triple-digit heat forecast for the week of October 5. We plan to resume the week of October 12 for the final Sevillano harvest of the season.
All fresh olives ship by UPS Ground. The exact charge is calculated at checkout using American Olive Farmer’s discounted UPS merchant rate and passed through without markup.
Each 20 lb box ships separately with its own UPS label.
