2026 Ripe Olive Harvest Update, August 17
Our ripe olive harvest follows the green olive season. We are not yet accepting orders. We will open this offer when the fruit has developed sufficient color and oil content, typically in late October or November.
Earlier ripe-olive harvests may contain a natural mixture of green, magenta, and ripe fruit. As the season progresses, the olives may deepen to magenta, purple, or nearly black.
Later harvests are also more exposed to weather. Rain can interrupt picking, while the fruit continues to mature on the tree, so exact availability and shipping dates cannot be guaranteed this far in advance.
Back-in-stock notifications are alerts only; they do not reserve fruit or a place in the harvest queue. An order must be placed once the ripe-olive offer opens.
Fresh Ripe Olives for Home Curing
These freshly harvested olives are sold raw, uncured, and untreated. They must be cured before eating.
This fruit is intended for curing methods designed for ripe olives, including dry-salt curing and other traditional ripe-olive preparations. Because the color, variety, and degree of ripeness may vary during the season, customers should review the current harvest update before ordering.
The 10 lb box is a practical choice for a smaller household batch, classroom, or community project. We also offer a 20 lb box of fresh raw ripe olives , which provides our best standard price per pound.

Ripe Olives for Small-Batch Oil Pressing
Some customers purchase ripe olives for educational programs or hobby-scale oil pressing.
Customers using a cider press followed by gravity separation have reported producing approximately 16 fluid ounces of oil from a 20 lb box. Under similar conditions, a 10 lb box might produce approximately 8 fluid ounces. This is an anecdotal planning estimate rather than a guaranteed yield.
Results will vary substantially according to olive variety, maturity, oil content, equipment, pressing technique, and extraction efficiency.
Ripe Olives for Chanukah Oil-Making Programs
We learned a great deal from our school, community center, and temple customers during the 2025 harvest and are preparing to expand this program in 2026.
Because Chanukah falls during a demanding shipping period, please coordinate your needs with us early in the season. Our target shipping date for Chanukah oil-making orders is Monday, November 23.
Participants should be prepared to press the olives promptly after delivery rather than store the raw fruit until the holiday. Variety, Color, and Size
We cannot guarantee a particular olive variety for this seasonal offer. Ripe olive boxes may contain one or more oil-producing varieties selected according to soundness, maturity, available supply, and oil content.
The size, shape, and color of the fruit will therefore vary. Earlier shipments may contain olives ranging from green to magenta, while later fruit may be deep purple or nearly black.
This offer is selected principally for ripeness and oil content rather than for uniform table-olive size or appearance. Please contact Liz at 530-727-2004 when a particular degree of maturity is important to your intended use.

Prices increase as the fruit matures because later harvests require more sorting and produce a higher percentage of culls. Ripe olives are our most labor-intensive fresh olive offer: cold-weather harvesting is slower, and the fruit requires especially careful selection for soundness, color, and oil content.

How Fresh Ripe Olives Ship
During harvest, olives are picked from Corning orchards early in the day, then sorted and hand-packed at our Fresh Olive Rally Point in Corning for our afternoon UPS pickup.
All fresh olives ship by UPS Ground. The exact charge is calculated at checkout using American Olive Farmer’s discounted UPS merchant rate and is passed through without markup. UPS may apply a remote- or extended-area surcharge based on the delivery address.
Each 10 lb box ships as a separate package with its own UPS label. Multiple-box orders are therefore charged per package. We have compared the alternatives carefully: several manageable cartons cost less to ship than one exceptionally heavy carton.
Ripe olives and our named green olive varieties cannot be combined in one box because they may be harvested, sorted, and packed at different times.
