Ripe Olives for Curing (Yes!)

We hand harvest, hand sort, and hand pack oil-rich olives as weather and orchard conditions allow following our green olive harvest. Olives earlier in the year will be a mix of green and ripe, and as we proceed through to the end of harvest will continue to ship when the fruit has achieved a deep magenta or even purple-black color. The olives on this page are suitable for a ripe cure, whether salted and left to hang in a pillowcase or sundried as some of our patrons prefer. 

If you are a hobbyist and interested in making small quantities of virgin olive oil for home use (e.g. cosmetics or cooking), our customers report getting about 16 oz of oil from a 20 lb box when using a cider press followed by gravity for separation. Results will vary.

Ripe Olives For Chanukah Oil Making

We learned a lot from our customers in 2025 and are prepared to expand our oil making program for schools, community centers, and temples in 2026, however, ask that you work with us to coordinate your needs early in the season. The holiday falls during a particularly difficult time logistically and our current plan is to pack and ship early to avoid disappointment.

Our target Chanukah ship date is Monday, November 23rd.  Please check our shipping chart to determine arrival to your location and notify me if you see a problem.

Information on Olive Varieties

We cannot guarantee the particular olive variety that we'll be harvesting for ripe olives except that they will be oil olives with sufficient ripeness and oil content between 50% and 100% ripe. How we ship

All orders of fresh olives are hand packed to order the same day we harvest and then shipped via UPS Ground from the American Olive Farmer "Fresh Olive Rally Point" in Corning. Shipping charges are based on a 10 lb box plus packaging and are based on what UPS charges us from our location to yours. 

We also offer this item in a larger, 20 lb box at a 15% savings.

If you are interested in firm, green olives for curing, do not order this item. Green olive customers should click one of the links below to sign up for 2026 pre-order notification. Olives are an annual crop, and have green unripe olives only in September and early October.
