Fresh Raw Sevillano Olives, 20 lb Box
Fresh, green, uncured Sevillano olives grown in Northern California for home curing. Sevillano has exceptionally dense flesh and remains relatively firm at every stage of maturity.
2026 Sevillano Harvest Update, August 1
We inspected three of the four main Sevillano orchard blocks on August 1. The crop is sizing nicely, but the fruit needs additional time on the trees. We expect daily orchard deliveries of early Sevillano to begin Tuesday, September 8.
Preorders are now open for 100% Green—firmest Sevillano olives. Green-Yellow and Green with Magenta Blush fruit will be offered separately as the crop matures. Exact harvest and shipping dates remain subject to fruit maturity, weather, and orchard conditions.

Fresh Raw Olives for Home Curing
These freshly harvested Sevillano olives are sold raw, uncured, and untreated. They must be cured before eating.
Whether you are continuing a family tradition or preparing olives for the first time, Sevillano’s large size and exceptionally dense flesh make it well suited to lye curing, brining, and cracked or smashed olive preparations.
We also offer a 10 lb box of Sevillano olives.

Sevillano Size and Yield
Sevillano is one of the largest table olive varieties. Each box contains a natural assortment of sizes produced by the orchard and available at the selected stage of maturity. Exact proportions will vary during the harvest.
Because Sevillano is exceptionally large and densely fleshed, the fruit is especially satisfying for cracked, smashed, brined, and lye-cured preparations. As a planning estimate, one pound of fresh Sevillano olives generally fills approximately one quart jar, depending upon fruit size and how tightly the jar is packed. A 20 lb box will therefore fill roughly twenty quart jars.
About Sevillano Olives
Sevillano originated in Seville, Spain, where the variety is known as Gordal, meaning “the fat one.” In the United States, these exceptionally large olives may also be sold as Queen or colossal olives, although commercial size descriptions vary.
Despite its impressive size, Sevillano has a relatively large pit and a modest flesh-to-pit ratio. Its dense flesh and very low oil content help it retain a substantial texture through curing and make it especially desirable as a table olive.
Sevillano is grown for curing and is not suitable for making olive oil.
Compare Fresh Olive Box Sizes and Prices
Prices vary according to fruit size and maturity. Undersize Sevillano is a limited-availability value offer consisting of sound, smaller fruit. Later harvests require more sorting and produce a higher percentage of culls. Ripe olives are a separate seasonal offer selected for color and oil content.
The 20 lb box offers our best standard price per pound when that size is available.
| Maturity or Offer | 10 lb Box | 20 lb Box |
|---|---|---|
| Undersize Sevillano—limited availability | $47.50 · $4.75/lb | Not offered |
| 100% Green—firmest | $55 · $5.50/lb | $105 · $5.25/lb |
| Green-Yellow—slightly more tender | $60 · $6.00/lb | $115 · $5.75/lb |
| Green with Magenta Blush—most tender | $65 · $6.50/lb | $125 · $6.25/lb |
| Ripe Olives—separate seasonal offer | $70 · $7.00/lb | $135 · $6.75/lb |

How Fresh Olives Ship
During harvest, olives are picked from Corning orchards early each morning, then sized, graded, and hand-packed at our Fresh Olive Rally Point in Corning for our afternoon UPS pickup. We work to avoid overnight carryover; any limited carryover is reserved for nearby destinations rather than cross-country shipment.
All fresh olives ship by UPS Ground. The exact charge is calculated at checkout using American Olive Farmer’s discounted UPS merchant rate and is passed through without markup. UPS may apply a remote- or extended-area surcharge based on the delivery address.
Each 20 lb box ships as a separate package with its own UPS label. Multiple-box orders are therefore charged per package. We have compared the alternatives carefully: several manageable cartons cost less to ship than one exceptionally heavy carton.
Each olive variety is packed separately. We cannot combine Sevillano and Manzanillo in one box because the varieties may be harvested, graded, and packed at different times.
