Fresh, green, uncured Sevillano olives selected at 24 mm and larger—the largest fruit we are packing from the 2026 harvest. Known in Spain as Gordal, Sevillano is an exceptionally large table-olive variety with dense flesh and excellent curing character.

2026 Sevillano Harvest Update, September 7

Early sorting shows that the 2026 Sevillano crop is running smaller than last year’s. We are selecting fruit measuring 24 mm and larger for this Colossal pack.

Customers should expect a greater proportion of olives around 24–25 mm than last season. We are seeing fewer of the exceptionally large olives above 26 mm and very little fruit at the extreme upper end of the size range so far this year.

This is a difference in size distribution, not fruit quality. The olives are sound, very green and firm, with Sevillano’s characteristic dense flesh and curing qualities.

We are currently working through orders already in the harvest queue. Orders placed after August 18 should allow approximately seven business days before shipment. This is an order-processing lead time, not time that harvested olives are held.

We harvest fruit as we work through the queue so that olives can be sized, graded, packed, and handed to UPS while fresh. Exact timing can vary slightly with harvest conditions, maturity, and the daily size distribution of the crop. Orders are filled in the order received.

The 100% Green—Firmest stage is naturally short. Green-Yellow and Green with Magenta Blush fruit will be harvested separately as the crop advances in maturity.

Back-in-stock notifications are alerts only; they do not reserve fruit or a place in the harvest queue. An order must be placed to enter the queue.

What Is Our 24 mm+ Colossal Sevillano Pack?

This box is reserved for Sevillano olives measuring 24 mm and larger. It contains the largest fruit we are selecting from the 2026 harvest.

Each box contains a natural assortment within that range. Exact sizes and proportions will vary with the orchard, maturity, and daily sort. Specific sizes cannot be requested.

In the United States, large Sevillano olives have long been marketed using familiar size terms such as Queen, Jumbo, and Colossal. Commercial terminology varies, so we use the measured 24 mm minimum to make the contents of this pack clear.

Two Sevillano Size Selections

We are sorting the 2026 Sevillano harvest into two customer-facing size ranges.

24 mm+ Colossal Sevillano is the largest fruit selected from the harvest and packed in this offer.

18–23 mm Large-to-Jumbo Sevillano is sound fruit from the same harvest. This is the size range we previously offered as “Undersize Sevillano.”

Fruit 17 mm and smaller is not packed for shipment.

Customers who need a smaller quantity may choose our 10 lb Colossal Sevillano box or our 10 lb 18–23 mm Large-to-Jumbo Sevillano box.

Fresh Raw Olives for Home Curing

These freshly harvested Sevillano olives are sold raw, uncured, and untreated. They must be cured before eating.

Whether you are continuing a family tradition or preparing olives for the first time, Sevillano’s large size and exceptionally dense flesh make it well suited to lye curing, brining, and cracked or smashed olive preparations.

Sevillano Size and Yield

Sevillano is one of the largest table-olive varieties. This Colossal pack contains fruit measuring 24 mm and larger, selected during daily sizing and grading.

The natural size distribution changes throughout the harvest. A 24 mm minimum therefore does not mean every olive in the box will be the same size; it defines the lower limit for this selection.

As a planning estimate, one pound of fresh Sevillano olives generally fills approximately one quart jar, depending on fruit size and how tightly the jar is packed. A 20 lb box will therefore fill roughly twenty quart jars.

About Sevillano Olives

Sevillano originated in Seville, Spain, where the variety is known as Gordal, meaning “the fat one.” In the United States, the characteristically large fruit has long been sold using size terms such as Queen, Jumbo, and Colossal, although commercial size descriptions vary.

Sevillano carries a relatively large pit in proportion to its flesh. Its dense flesh and very low oil content help it retain a substantial texture through curing and make it especially desirable as a table olive.

Sevillano is grown for curing and is not a practical choice for making olive oil at home.

The 24 mm+ Colossal packs are reserved for the largest fruit we select from the crop. Ripe olives are a separate seasonal offer selected for color and oil content.

How Fresh Olives Ship

During harvest, olives are picked from Corning orchards early each morning, then sized, graded, and hand-packed at our Fresh Olive Rally Point in Corning for our afternoon UPS pickup.

For regular harvest orders, an order may wait approximately seven business days before its fruit is harvested. We do not harvest an order’s olives and then hold them for seven days. The lead time reflects the orders ahead of yours; fruit is harvested as we are ready to process and ship it.

All fresh olives ship by UPS Ground. The exact charge is calculated at checkout using American Olive Farmer’s discounted UPS merchant rate and is passed through without markup. UPS may apply a remote- or extended-area surcharge based on the delivery address.

Each 20 lb box ships as a separate package with its own UPS label. Multiple-box orders are therefore charged per package. We have compared the alternatives carefully: several manageable cartons cost less to ship than one exceptionally heavy carton.

Each olive variety is packed separately. We cannot combine Sevillano and Manzanillo in one box because the varieties may be harvested, graded, and packed at different times.
