2026 Undersize Sevillano Harvest Update, August 17

The 2026 crop is expected to give us a generous supply of sound, smaller Sevillano. Unlike our standard boxes, which are reserved for the larger fruit, this offer is packed from the smaller Sevillano separated during daily sizing and grading.

We have added five picking and packing days beginning Monday, August 31, ahead of our originally advertised September 8 start. Orders placed now will join the next available harvest queue, currently beginning the week of September 14.

Exact quantities will still vary from day to day because these olives come from the natural size distribution of the crop. Based on what we are seeing in the orchards, however, we expect better availability of Undersize Sevillano this season than demand currently suggests.

If maximum fruit size is not important to your curing method, this is a particularly good-value way to buy 10 lb of Sevillano from the 2026 harvest.

What Are Undersize Sevillano Olives?

These are sound, whole Sevillano olives sorted from our regular production because they fall below the size range reserved for our standard Sevillano boxes. They are smaller fruit, not damaged olives or processing culls.

Each box contains a natural assortment of smaller Sevillano sizes. Exact size and proportions will vary with the orchard, maturity, and daily sort. Specific sizes cannot be requested.

Some Undersize Sevillano may approach Manzanillo in general size, but they remain a different variety with Sevillano’s characteristic shape, dense flesh, and comparatively substantial pit.

We are also offering a 20 lb box of Undersize Sevillano this season. Customers who prefer the characteristically larger Sevillano fruit may instead choose our regular 10 lb box of Sevillano olives or our regular 20 lb box .

Fresh Raw Olives for Home Curing

These freshly harvested Sevillano olives are sold raw, uncured, and untreated. They must be cured before eating.

Whether you are continuing a family tradition or preparing olives for the first time, Sevillano’s dense flesh makes it well suited to lye curing, brining, and cracked or smashed olive preparations.

About Sevillano Olives

Sevillano originated in Seville, Spain, where the variety is known as Gordal, meaning “the fat one.” In the United States, the characteristically larger fruit may also be sold as Queen, Jumbo, or Colossal olives, although commercial size descriptions vary.

Sevillano carries a relatively large pit in proportion to its flesh. Its dense flesh and very low oil content help it retain a substantial texture through curing and make it especially desirable as a table olive.

Sevillano is grown for curing and is not a practical choice for making olive oil at home.

How Fresh Olives Ship

During harvest, olives are picked from Corning orchards early each morning, then sized, graded, and hand-packed at our Fresh Olive Rally Point in Corning for our afternoon UPS pickup. We work to avoid overnight carryover; any limited carryover is reserved for nearby destinations rather than cross-country shipment.

All fresh olives ship by UPS Ground. The exact charge is calculated at checkout using American Olive Farmer’s discounted UPS merchant rate and is passed through without markup. UPS may apply a remote- or extended-area surcharge based on the delivery address.

Each 10 lb box ships as a separate package with its own UPS label. Multiple-box orders are therefore charged per package. We have compared the alternatives carefully: several manageable cartons cost less to ship than one exceptionally heavy carton.

Each olive variety is packed separately. We cannot combine Sevillano and Manzanillo in one box because the varieties may be harvested, graded, and packed at different times.
