Crack Olives Quickly and Evenly

Cracking or lightly crushing fresh olives opens the skin and flesh so water, brine, or curing solution can penetrate more readily. It is traditionally done one olive at a time with a smooth stone, wooden mallet, or meat pounder—effective methods, but laborious when processing a substantial batch.

Our wooden olive crusher allows you to work through many olives more quickly and consistently. It is especially useful for large, dense table olives such as Sevillano and for traditional cracked or smashed olive preparations.

The objective is to open the fruit, not pulverize it. A controlled pull of the paddle compresses the olive until the skin breaks and the flesh opens, then allows the cracked fruit to fall through the discharge opening into a waiting container.

How the Olive Crusher Works

Pour a manageable quantity of olives into the wooden box and guide them toward the opening. Pull the paddle toward you with steady, moderate pressure. The olives are compressed, cracked, and released through the opening below.

The stainless-steel pivot can be adjusted to accommodate larger or smaller olives. Begin with gentle pressure and adjust the mechanism as needed for the fruit you are processing.

The long base was designed for seated use. Position the discharge opening over a bucket, rest the extended end securely on a sturdy chair, and draw the paddle toward you. If you expect to work through a large batch, sit on a thin cushion for greater comfort.

The Inspiration

I first encountered homemade olive crushers in Spain and the Levant. They ranged from modest tabletop devices that worked efficiently to noisy electric models that were more complicated than most home curers would ever need.

The version that stayed with me belonged to an elderly gentleman who had added a long plank to a simple crusher assembled from scrap wood. He worked while seated and moved through his olives with remarkable ease and speed.

That practical, unpretentious solution became the inspiration for the American Olive Farmer wooden olive crusher: a substantial manual tool made for people who cure meaningful quantities of olives at home.

An Exclusive American Olive Farmer Design

Our olive crusher is made from sustainably sourced mango wood by a leading furniture manufacturer in Jaipur with extensive experience producing high-quality wood furniture for international markets. Stainless-steel hardware provides the pivot mechanism, while the substantial wood construction gives the tool the strength needed for repeated seasonal use.

Dense, close-grained mango hardwood was selected rather than the lighter softwoods commonly used for simpler olive crushers. The wooden components are precisely fitted, carefully sanded, and smoothly finished, reflecting the workmanship expected from an experienced furniture manufacturer.

The adjustable pivot, long seated-use base, discharge opening, and overall proportions were developed expressly for American Olive Farmer. Each wooden component is protected with food-safe linseed oil, creating a smooth, practical surface suited to repeated kitchen use.

Caring for Your Wooden Olive Crusher

The crusher arrives disassembled with two principal wooden components, stainless-steel hardware, assembly instructions, and operating guidance.

After use, remove any remaining olive flesh and wipe the wood with a clean, lightly dampened cloth. Do not immerse the crusher in water or place it in a dishwasher. Allow all parts to dry completely before storage.

Condition the wood periodically with food-safe mineral oil or another conditioner specifically approved for food-contact wood. Mango wood will naturally deepen in color with use. Regular conditioning helps protect the surface, reduces moisture absorption, and lowers the risk of drying, cracking, or warping.
