From Corning Table Olive to Remarkable Oil
Ascolano was originally planted around Corning for California’s table-olive industry. The large, tender fruit proved too soft and easily damaged for cannery equipment, but milling revealed an unexpected virtue: an olive oil of extraordinary aromatic intensity.
Producing oil from Ascolano is relatively inefficient, yet Lucero became an early champion of the variety because the result was so distinctive. What began as an unsuccessful table olive found a new expression as one of California’s most unusual and beloved extra virgin olive oils.
