20 lb Box Fresh Sevillano Olives
We are currently packing and shipping Monday-Friday
PLEASE READ BEFORE ORDERING. The Sevillano crop is very light this year. Early harvest olives are sold out. We are taking orders for "mid harvest", although the fruit is still very green and firm. I am hoping to take orders through September 17th and ship through September 19th, depending on weather and labor. We expect to be sold out next week.
Olives will be harvested daily, weather permitting, packed Monday through Friday, and shipped daily via UPS Ground.
During a typical year, Early, Mid, and Late Harvest waves are released for purchase separately as the crop matures; exact dates as determined by Mother Nature. Liz will do her best to keep you informed on this page. 2025 there will not be late harvest and mid harvest is unlikely.
Each autumn California's 2 big canneries and numerous local families harvest the olive crop for brining green olives. If you're interested in trying to brine your own at home, we'll ship a 20 lb box of fresh Sevillano olives to you as long as your address is in the contiguous 48 US states.
2025 Sevillano Sizing Information
Because the crop is so light, the olives that are produced are larger than average size. Each box contains a mix of Super colossal, colossal, and jumbo sized olives this year. If you like exceptionally large Sevillano olives, this is a good year to load up!
Note: olives are alternate bearing trees. 2024's heavy crop gave us smaller fruit, mostly jumbo and extra large, only 5% colossal and no super colossals. It is likely 2026 will return to the 2024 experience.]
General Sevillano Olive Information
Sevillano is a variety originating in Seville, Spain where they are known as Gordal, (the Fat One). These olives are are commonly marketed in the US as Queen olives or colossal olives, referring to their large size. They have a firm flesh and large pit with very little oil, making them ideal for curing but not too efficient for making olive oil. Not suitable for making olive oil.
