Whiskey Oak Smoked Seasoning Gift Set
General Information
Whiskey Oak Seasonings is one of the few products on the market made by smoking over real wood and not a shortcut effect via "liquid smoke". The producer, Kirk, uses wood from retired oak whiskey barrels, a unique hand built smoker, and slowly smokes in small batches.
Steak Seasoning
This herb and spice blend has been hand mixed then slowly cold smoked for hours over natural hardwood to produce savory and smoky flavor which enhances all meats, especially, but not exclusively, red meat.
Suitable for both cooking and finishing. Top suggestions are 2 to 3 teaspoons per pound of steak as a rub (allow to marinate for 30 minutes before grilling); mix in same proportion per pound for ground meat; coat a roast in olive oil and lightly coat with this seasoning mix, optimizing flavor by allowing to sit for 30 minutes prior to cooking.
- Ingredients: salt, pepper, dehydrated onion, dehydrated garlic, rosemary, thyme, fennel, coriander, paprika, crushed red pepper, hardwood smoke
- 2.0 oz (57 g)
Pork & Poultry Seasoning
This spice blend has been hand mixed then slowly cold smoked for hours over natural hardwood to produce a sweet, savory, and smoky flavor with just a touch of heat which enhances chicken and pork.
Suitable for both cooking and finishing. Top suggestions include use as a rub for chicken, chops, and ribs by preparing the meat with olive oil followed by the spice blend, which should be allowed to be absorbed for at least 20 minute before cooking. We've used it for Donald's Balsamic Glazed Baby Back Ribs recipe.
Use to enhance a Sloppy Joe recipe, or perhaps even (as Kirk suggests) as an inclusion for a sort of western spaghetti sauce.
- Ingredients: sugar, salt, dehydrated onion, dehydrated garlic, herbs and spices, cayenne, paprika, hardwood smoke
- 2.5 oz (70 g)
Smoked Sugar
The sugar used is a raw sugar which is transformed when it is slowly smoked, giving finished products a sophisticated sweetness.
Suitable for both cooking and finishing. Top suggestions include grilled salmon or other seafood; topping pies, tarts, and cobblers, or using some or in a smoky crème brûlée, or various puddings, custards, and ice cream. Rim cocktail glasses for a smoky twist.
- Ingredients: raw sugar, hardwood smoke
- 3.0 oz (85 g)
Smoked Salt
When I was a corporate buyer, we were trained to name things by using a logical hierarchy, and in so doing would always start by asking, "what is it first?"
My instinct for the Whiskey Oak Seasonings collection was to immediately focus on the seasoning--the salt, sugar, or proprietary blend of spices, however, the maker has asked that we focus instead on what it REALLY is first--the smoke.
The salt itself is a clean even-grained coarse kosher salt that Kirk sources locally.
Suitable for both cooking and finishing meats, vegetables, and even desserts. Rim cocktail glasses with this product for a smoky twist.
- Ingredients: kosher salt, hardwood smoke
- 3.75 oz (107 g)
