All of our vinegars come from the same small producer in Modena, including a few that he flavors. Fig, in particular, is a local favorite and is one of the few flavored balsamic vinegars you'll find in a gastronomia Italiana.
There are hundreds of varieties of figs grown in Italy, both cultivated and wild, and one of the best loved and most esteemed varieties is the Melanzana from the south. If you recognized the word as the same as “eggplant” in Italian, you’re right, because these beauties harken to the purple color of eggplants.
Melanzana figs are considered a premium fruit and have a deep, rich flavor which is best enjoyed fresh, not dried. This fresh aspect makes them the ideal variety to be shipped to Modena and puréed to be added to our traditional balsamic vinegar.
Flavor & Enjoyment
Sweet, ripe, and jammy flavor is an excellent foil for the brightness of its traditional balsamic base with a long and satisfying figgy finish.
This vinegar makes excellent accompaniments to either salad and cheese plates, and if you enjoy making marinades try a bit with garlic olive oil for steak or pork. Vinegars are also suitable for cocktails, mocktails, and shrubs or as an ingredient in relishes.

Cooked grape must (Lambrusco, Sangiovese, and Trebbiano varieties), barrel aged red wine vinegar, Melanzana Fig purée and natural flavoring. Sulfites are naturally occurring.
