Whole Mixed Table Olives with Fine Herbs
The olive growing / table olive making Losada family has developed a pleasing mix made of four types of olives, herbs, garlic, and red pepper based on a traditional recipe prepared in Andalucia during harvest. They've been in the olive business over 60 years, using an old-fashioned salt and water cure which allows the flavor of olives to come through.
The brand name "Dequmana" is a nod to Decumano, the old Roman road that ran from their town to Rome.
Flavor & Enjoyment
The 12 to 16 week salt and water cure in barrels is undertaken as it has for decades. Traditionally prepared with pits intact.
Ingredients: Whole Hojiblanca, Gordal, Cuquillo, and Arbequina olives, water, salt, vinegar, cumin, oregano, garlic, and natural red pepper.
